Got Leftover Chicken? Turn It Into Dinner Again! đâ¨
You know that container of leftover chicken sitting in the fridge?
The one you cooked with the very best intentionsâŚand now youâre staring at it thinking, âOkay, but I donât want chicken again.â đ
I hear you!
But leftover chicken is actually one of my favorite little weeknight shortcuts. Whether itâs grilled, baked, roasted, or even rotisserie chicken, having cooked chicken ready to go means youâre already halfway to another meal.
And around here, weâre all about making dinner easier and ditching that drive-thru!
First Things First: Donât Think âLeftoversâ
Think meal starter.
Instead of reheating yesterdayâs chicken and serving it exactly the same way, give it a whole new personality. Chop it, shred it, season it differently, add a sauce, wrap it in something deliciousâŚand suddenly nobody is complaining about leftovers.
Here are a few easy ideas:
đŽ Chicken Tacos or Quesadillas
Shred your leftover chicken and warm it with a little taco seasoning. Add it to tortillas with cheese and your favorite toppings.
For quesadillas, sandwich the chicken with shredded cheese, peppers, onions, or whatever needs to be rescued from the veggie drawer. Toast until crispy and melty.
Dinner: DONE.
đĽ Turn It Into a Big Olâ Salad
Leftover chicken is one of the easiest ways to turn a side salad into a meal.
Start with your favorite greens, then add chopped chicken, veggies, cheese, avocado, nuts or seeds, and your favorite dressing.
Want to change the flavor completely? Go Southwest with corn, black beans, salsa, and avocadoâor Caesar with romaine, Parmesan, and crunchy croutons.
đ Chicken Pizza or Flatbread
This one is great for a clean-out-the-fridge night!
Use pizza dough, naan, or flatbread and top it with leftover chicken, cheese, veggies, and whatever sauce sounds good.
Try BBQ sauce + chicken + red onion + mozzarella for an easy BBQ Chicken Pizza. YUM!
đ Easy Chicken Pasta
Cook your favorite pasta and toss it with your leftover chicken, veggies, and a simple sauce.
Alfredo, pesto, marinara, or even a little olive oil, garlic, Parmesan, and pasta water can turn that chicken into a completely different meal.
And if you happen to have spinach, broccoli, tomatoes, or peppers hanging around, toss those in too. We are not letting the produce drawer win this week. đ
𼣠Chicken Soup Shortcut
You do NOT have to cook chicken soup all day for it to taste delicious.
Add your cooked chicken to broth with carrots, celery, onion, herbs, and noodles or rice. Since the chicken is already cooked, you can have a cozy pot of soup on the table much faster.
Perfect for busy nightsâor when you just want something warm and comforting.
